Lecture 1: Overview of cellular food products and challenges in market expansion
The session provided an overview of the cell-based food (so-called ‘cultured meat’) industry and the formation of rules (regulations and industry-initiated initiatives), with examples from home and abroad. The industry overview included an introduction to the market size, notable players, an overview of the cellular food production process and the characteristics of cellular foods that the speaker had actually tasted. With regard to rule formation, the key industry issues and the state of discussion surrounding them in determining the future prospects of the cellular agriculture sector were also mentioned.
