A paper co-authored by ESRP Director Akira Igata and RCAST Visiting Researcher Megumi Avigail Yoshitomi, titled ‘The Impact of Cellular Agriculture on Food Culture and the Future of the Food Industry,’ has been published in Volume 55, Issue 3 of the ‘Journal of the Japanese Society of Food Science and Technology.’ The paper examines the impact of cellular agriculture on food culture from three perspectives: past, present, and future.
