A paper co-authored by Akira Igata, Director of ESRP, Research Center for Advanced Science and Technology, The University of Tokyo, and Megumi Avigail Yoshitomi, ESRP Visiting Researcher at the Research Center for Advanced Science and Technology, The University of Tokyo, titled ‘The Impact of Cellular Agriculture on Food Culture and the Future of the Food Industry,’ has been published in Volume 55, Issue 3 of the ‘Journal of the Japanese Society of Food Science and Technology.’ The paper examines the impact of cellular agriculture on food culture from three perspectives: past, present, and future.
